Turn yesterday’s leftovers into today’s completely different meal.
Second Meal by Design
Good food doesn’t have to be eaten only once.
Second Meal by Design is about taking food left from one meal and turning it into something completely different the next day.
Each week I’ll share what I have left, invite you to challenge me with ideas, and then create a new meal using those ingredients. I’ll share the finished dish, recipe, calories, macros and, of course, my all-important Enjoyment Score.
It’s about reducing waste, saving money and proving that leftovers don’t have to feel like leftovers.
One meal. A little imagination. A completely different second meal — by design.
My First Second Meal by Design
For my first entry, I chose one of my favourites — Chinese Chicken Stir-Fry.
The leftover chicken from Sunday’s roast produced three completely different stir-fry meals. Add the two portions of Sunday roast, and one chicken ultimately provided Six meals.
That’s exactly what Second Meal by Design is about: cook once, deliberately save what you don’t need, then use a little imagination to create something completely different the following day.
Ideal for busy families, reducing food waste and making good food go further — without feeling as though you’re simply eating yesterday’s dinner again.
Below you’ll find the full recipe and method, a photograph of the finished meal, the calories and macros, and the cost of both meals.
